Rancho Viejo Spokane
If I could choose a "last meal", the fajitas at Rancho Viejo would be my choice. I visit Spokane at least twice a year and I always ordered them at least twice during my visits. Ask them to "burn them" and they will be nice and browned. The salsa here is the best I've had at a Mexican restaurant (the hot is better than the mild). The vegetarian burrito is a surprisingly delicious feast. And I mean feast. It's hard for my mom and I to finish one between the two of us. The service is wonderful and I don't even have to tell the server what I want to drink. They remember. (Diet Coke with grenadine.)The only reason I'm giving 4 stars instead of 5 is the cost is on the high side for a casual restaurant. $16 for fajitas is steep. But, I pay it. Also, the tortilla soup is greasy and flavorless. Stick with the combo platers or fajitas.

We stop in regularly at Casa De Oro. We are always seated right away and the staff is fast and friendly. Our favorite dish is the Chili Verde. It is consistantly good and the portions are huge.
