This bakery, building is 75 years old with 50 year old dilapidated equipment inside, produced with idiotic union rules and labor force that has steadily been trimmed of products and people and is now running two shifts of only one product. Bread. There is no QA in the plant. With 35 people in the entire plant left, It is on the razors edge of being closed like so many Bimbo plants Bimbo has bought, not for production increases but to eliminate their competition. With competent maintenace management retiring or leaving it requires whole maintenance crews and their management from Sioux City, repair even though the facility has a large maintenance department of its own. The incompetence comes from the newly appointed “supervisor” who was a lead before and sits in the air conditioned office drinking quart bottles of pop all day which contributes to his obesity. In interviews they will lie, promising you a shift they know they can’t promise because of the union rules on seniority

Most cupcakes are pretty good, if just a bit pricey. Chocolate always seem really dry. Vanilla Almond was gummy. Cookie dough ball in Cookie Monster was too big--hardly any cake. Always seems a bit snooty.

OUR STORY We have been long time friends who have both experienced chronic pain, fatigue and low energy. After figuring out we were both allergic to the things we were eating we made an appointment with a Specialist and he confirmed our gluten allergy. After changing our diets we noticed a huge improvement in our health! We knew this had to be a lifestyle change and not a mere 'fad diet.' The challenge was that gluten free products lacked taste and felt like bricks. Worst it was difficult to find local vendors who had fresh bakery items. We both grew up loving to bake for our family and friends and so we decided to take the challenge on and start experimenting with gluten free flours. We were able to make allergy free desserts that tasted great and were good for them! Quickly the hobby grew into an idea and then into a business. Many enjoy our baked goodies because it's a healthier option compared to average processed foods. Many do not even realize they are eating something that's good for them! Why not try our baked goods for yourself? Betchya can't tell they are gluten free!

From what I understand, this shop is now under new ownership and you can tell! They keep their trays stocked much better, and always have a fair variety of donuts right up until closing. Their donuts are delicious and it's worth a visit back if you were one of the original unsatisfied customers. Fairly priced!
